Honey offers a natural sweetness, while brown sugar is often cheaper.
Sift the flour into a mixing bowl.
Add 15g of granulated sugar and a pinch of salt, then mix well.
Add 80g of frozen unsalted butter cut into cubes.
Use fingers to rub each piece of butter into flakes within the flour.
Add 30g of ice water and roughly gather the dough together, being careful not to over-work it.
It's okay if some butter pieces are still visible in the dough.
Place the dough in the refrigerator and chill for one hour.
Slice 200g of washed strawberries and add to a bowl.
Add 40g of blueberries, 30g of granulated sugar, and 6g of cornstarch to the strawberries.
Zest half a lemon and squeeze in a little lemon juice, then mix gently.
Before rolling out the dough, sprinkle some flour on the surface to prevent sticking.
Roll the dough to a thickness of 0.4 cm.
Use a plate to trace a circle of appropriate size.
Transfer the pie crust to a baking sheet.
Place the fruit filling in the center, leaving a width of 5-6 cm at the edge.
Fold the edges of the pie crust over the filling.
Brush the surface with egg wash.
Sprinkle with coarse brown sugar.
Preheat the oven to 220°C (428°F).
Bake for 23-25 minutes until golden brown.
Let cool completely before enjoying.
