Roll out the chilled dough, turning it a quarter turn after each roll to maintain a round shape.
Sprinkle 100 grams of ground almonds on the pastry to absorb moisture from the strawberries.
Layer the strawberries evenly on top of the ground almonds.
Fold the edges of the pastry over the strawberries, creating a rustic crimped edge.
Prepare an egg wash by whisking 1 egg and brush it over the pastry.
Sprinkle turbinado sugar over the pastry for sweetness and texture.
Bake the galette in the oven for about 30 minutes, checking for a golden color on the pastry.
