1 tablespoon ginger
2 shallots
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon Pimientos Espelette
2 tablespoons Wondra flour
1 cup pea shoots
1 cup shiitake mushrooms
2 scallions

Heat olive oil in a Teflon pan until almost smoking.
