Add 1.5 teaspoons of active dry yeast and 0.25 cup of warm water into a bowl and stir. Let it sit for about 5 minutes to activate.

In a stand mixer fitted with a dough hook, combine 1 tablespoon of sea salt, 1.25 cups of warm water, and 1.5 teaspoons of olive oil. Start on low speed.

Add the activated yeast mixture to the stand mixer and combine.

Slowly add the flour mixture of 3.75 cups Italian double zero flour and 0.25 cup whole wheat flour until the dough is soft and flexible, not too sticky.

Once the dough is smooth, tuck it into itself and place it back into the bowl. Cover with a wet tea towel.

Wrap the dough tightly in plastic wrap and let it rise for 6 to 8 hours, or refrigerate or freeze it if not using immediately.

Preheat the oven to 550°F and brush a baking sheet with olive oil.

Shape the dough by hand into a circle or rectangle, making sure it is at room temperature for easier stretching. Pinch any holes shut.

Spread olive oil on the shaped dough using a fresh basil leaf to impart flavor.

Add the three cheeses: brie, upper bench gold, and okanagan sun on top of the dough.

Bake in the oven for 8 to 10 minutes, or until the cheese is bubbly and the crust is golden brown, rotating halfway through for even cooking.

Once out of the oven, top the pizza with fresh arugula and drizzle with lemon olive oil.
