Apple butter has its roots in colonial America, where it was a way to preserve the harvest. Traditionally made by slow-cooking apples with sugar and spices, this spread was often served on bread or biscuits. Today, it remains a beloved fall staple, enjoyed in various forms, from breakfast spreads to ingredients in baked goods.

Mixed spice can provide a similar flavor profile.
Wash the apples by filling the sink with water and rubbing them between your hands.
Remove the stems by twisting them off.
Use an apple corer and cutter to core and cut the apples without peeling them.
Process the apples in a food processor to reduce their size.
Transfer the processed apples into a large thick-bottomed soup pot.
Add 2 litres of mulled cider to the pot with the apples.
Bring the mixture to a boil while stirring.
Before boiling, add 3 cups of granulated sugar and 3 cups of dark brown sugar, stirring to combine.
Add 2 tablespoons of ground cinnamon, 2 tablespoons of allspice, 1 teaspoon of cloves, 1 teaspoon of nutmeg, 1/2 cup of fresh squeezed lemon juice, and 2 tablespoons of vanilla extract to the pot.
Stir the mixture again and reduce the heat to a simmer once it boils.
Set a timer for 15 minutes and stir the pot every 15 minutes for a total of 2 hours of simmering.
After 2 hours, prepare canning jars by placing them in the dishwasher on a full cycle without soap.
Sterilize the lids and rings by placing them on the stovetop.
Use an immersion blender to puree the apple butter for about 10 minutes until smooth.
Perform a plate test by placing a teaspoon of apple butter on a cold plate and tilting it after 30 seconds to check if it holds its shape.
Fill sterilized jars with the apple butter using a sterilized ladle and funnel, leaving a little headroom.
Tighten the lids and rings on the jars and set them aside.
Process the jars in a large pot of boiling water for 15 minutes, carefully placing 5 to 6 jars at a time.
After 15 minutes, remove the jars from the boiling water using tongs and an oven mitt.
