Pour in coconut milk and enough water to cover the peas by an inch.
Add thyme, bay leaves, and black pepper to the pot.
Bring the mixture to a boil, then reduce heat to low and cover.
Simmer for about 30-40 minutes until peas are tender.
Stir in rinsed white rice and add salt to taste.
Cover and cook on low heat for 20 minutes or until rice is fluffy and liquid is absorbed.
Remove from heat and let it sit covered for 5 minutes before serving.
