1 medium onion
3 cloves garlic
1 bell pepper
1 medium carrot
2 stalks celery
2 tablespoons tomato paste
4 cups chicken broth
2 bay leaves
1 teaspoon thyme
1 teaspoon black pepper
1 teaspoon salt
1.5 cups rice
1 can (15 oz) canned black beans
1 cup coconut milk
1/4 cup cilantro

Heat olive oil in a large pot over medium heat until shimmering.

Add chopped onion, garlic, bell pepper, carrot, and celery; sauté until softened, about 5-7 minutes.

Add gibnut meat to the pot and brown on all sides, about 5-8 minutes.
