Peel the potatoes and wash them.
Slice the potatoes as thin as possible and place them in a bowl of water to prevent browning.
Melt 2 tablespoons of butter in a pan.
Add half a pod of sliced garlic and a small onion to the melted butter and sauté until the onions change color.
Grate 2 packs of extra sharp cheddar cheese, setting some aside for topping later.
Add 2 tablespoons of flour to the sautéed onion and garlic, stirring well.
Pour in 2 cans of evaporated milk, stirring to combine.
Add seasoned salt, black pepper, and a little salt to taste.
Add a small amount of ketchup and mustard for flavor.
Bring the mixture to a boil, stirring until it thickens.
Once thickened, stir in the grated cheese until melted and well combined.
Grease the baking dish with olive oil spray.
Drain the water from the sliced potatoes and layer them in the greased baking dish.
Pour the cheese sauce over the layered potatoes, ensuring they are well covered.
Top with reserved cheese and bake in the oven.
