Classic Carrot Loaf Cake with Cream Cheese Frosting

Preheat the oven to 350°F (175°C).
Grease and flour a loaf pan.
Grate the carrots and set aside.
In a large bowl, mix the granulated sugar, brown sugar, and eggs until well combined.
Add vegetable oil and vanilla extract to the sugar mixture and mix until smooth.
In another bowl, combine flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
Gradually add the dry ingredients to the wet mixture, stirring until just combined.
Fold in the grated carrots and walnuts until evenly distributed.
Pour the batter into the prepared loaf pan and smooth the top.
Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
For the frosting, beat cream cheese and butter until smooth.
Gradually add powdered sugar and milk, mixing until desired consistency is reached.
Spread the cream cheese frosting over the cooled loaf cake.
