Season the venison with salt and black pepper.
Heat olive oil in a hot pan.
Sear the venison to seal it in the pan.
Add butter to the pan to keep the venison moist.
Place the venison in a hot oven for 8 minutes.
In a separate pot, add red wine and chocolate to create the sauce.
Add shallots and garlic to the sauce mixture.
Add a generous amount of black peppercorns to the sauce.
Incorporate thyme and bay leaves into the sauce.
Pour in 350 ml of red wine for body and flavor.
Add 350 ml of brown chicken stock and reduce the sauce.
Add a dash of raspberry vinegar to the sauce.
Whisk in dark chocolate gently, avoiding boiling to prevent curdling.
If the sauce curdles, transfer to a cold pan to bring it back together.
Serve the venison slightly pink in the center with the red wine chocolate sauce.
