2 green chilies
1 teaspoon dried thyme
2 teaspoons cumin
2 teaspoons coriander
1 teaspoon fennel seeds
1 star anise
1 cinnamon stick

1 teaspoon turmeric powder
1 tablespoon garam masala
2 teaspoons cumin powder
2 teaspoons coriander powder
1 teaspoon cardamom powder
1 teaspoon red chili flakes
2 teaspoons chili powder
1 tablespoon ginger and garlic paste
1 teaspoon salt
2 chopped tomatoes
5 curry leaves
1/4 cup fresh coriander
1/4 cup fresh mint

Add vegetable oil to a pot on medium heat.

Add chopped onions, slit green chilies, thyme, cumin, fennel seeds, star anise, cinnamon stick, and bay leaves; mix well and sauté until the onions are translucent.

Once the onions are translucent, add turmeric powder, garam masala, cumin powder, coriander powder, cardamom powder, red chili flakes, chili powder, and ginger and garlic paste; mix all the spices together.

Add cubed and rinsed venison to the pot; add salt to taste and mix until the venison is coated in the spices.

Cover the pot and allow the meat to seal in the spices for 10 minutes without adding water, as the meat will release its own juices.

After 10 minutes, check the pot for liquid; there should be a lot of liquid from the meat.

Add chopped tomatoes, curry leaves, fresh coriander, and fresh mint; mix everything until well combined.

Cover the pot and cook on medium heat for 25 minutes without adding water.

After 25 minutes, stir and check if the meat is cooked throughout; note that venison may be a tad tough but should not be overcooked to retain flavor.

Remove from heat and plate the dish; garnish with freshly chopped coriander before serving.
