Venison and chorizo pupusas reflect a fusion of local game and flavorful sausage, making them a hearty and satisfying meal. Mix masa harina and water in a bowl until a dough forms.
Knead the dough for a few minutes until smooth.
Divide the dough into equal portions and shape into balls.
Flatten each ball into a disc about 1/4 inch thick.
Cook venison and chorizo in a skillet over medium heat until browned, about 5-7 minutes.
Remove from heat and chop the meat mixture finely.
Place a spoonful of the meat mixture and cheese in the center of each disc.
Fold the edges of the disc over the filling to seal and form a pocket.
Heat olive oil in a skillet over medium heat until shimmering.
Cook each pupusa for 3-4 minutes on each side until golden brown.
Serve hot with cabbage slaw and salsa on the side.
