Knead the dough until it becomes elastic and smooth, about 10 minutes.
Divide the dough into four equal parts and oil each ball with about 1 tablespoon of vegetable oil.
Cover the dough balls with plastic wrap and let them rest for 45 minutes to 1 hour.
Prepare the dairy mixture by melting 8 ounces of cream cheese and 8 ounces of Kerrygold butter over low heat, then add 1/2 cup of heavy whipping cream and mix until smooth.
Crumble the block of feta cheese in a bowl and mix in 2 eggs until combined.
Stretch the rested dough on a floured surface until it is paper thin.
Spread the dairy mixture evenly over the stretched dough.
Roll the dough into a coil and place it in a greased pan.
Preheat the oven to 375°F (190°C).
Cut the coiled pita into sections before baking.
Bake in the preheated oven until golden brown.
