Add 2/3 cup of molasses sugar to a clean bowl.

Pour in 1/2 cup of melted raw coconut oil.

Add 1/4 cup of molasses syrup to the bowl.

Use an electric mixer to blend the mixture until smooth, pressing down on the sugar if needed.

In a separate bowl, combine 1 2/3 cups of all-purpose flour, 1 teaspoon of ginger powder, 1 teaspoon of baking soda, 1 teaspoon of cinnamon, and a pinch of salt.

Mix the dry ingredients before adding them to the molasses mixture.

Use a spoon to mix the dry ingredients into the wet mixture, then use your hands to combine thoroughly.

If the mixture is dry, add vegan milk (oat milk) one tablespoon at a time, mixing until the dough is moist enough to form balls.

Roll the dough into balls and flatten them slightly with your hand, placing them on a sheet of parchment paper on a baking tray.

Bake the cookies at 170 degrees Celsius for 9 minutes.
