Preheat the grill to medium-high heat.

Cut peaches in half and remove the pits.

Brush the cut sides of the peaches with olive oil.

Sprinkle brown sugar and cinnamon over the cut sides.

Place peaches cut-side down on the grill.

Grill for 4-5 minutes until caramelized and grill marks appear.

Remove peaches from the grill and let cool slightly.

Drizzle with honey and lemon juice.

Serve warm with a scoop of vanilla ice cream.

Garnish with fresh mint leaves.
