2 coated lemons

1 oz grated pecorino Romano cheese
1 oz grated Parmigiano Reggiano cheese
1 tsp Dijon mustard
1 tsp minced garlic
0.5 oz diced anchovies
dash of Worcestershire sauce
1.5 oz extra virgin olive oil
1 coddled egg
1/4 tbsp freshly cracked black pepper

Wrap the lettuce in a linen to dry completely.

Use a wooden bowl made from one piece of wood.
