Caesar Salad

Cultural Context

Caesar salad is a popular dish in American cuisine, often served as a side salad in restaurants and homes alike. It is believed to have originated in the 1920s in Tijuana, Mexico, created by Italian immigrant Caesar Cardini. The salad's combination of crisp romaine lettuce, savory dressing, and crunchy croutons has made it a staple in many dining settings, from casual lunches to elegant dinners.

Servings4
ciabatta loaf, cubed
1 large Baby gem or small cos lettuce, stalked and quartered
1 bunch scallions
100ml soy milk
40ml balsamic vinegar
Heaped tbsp Dijon mustard
200ml rapeseed or sunflower oil
Tbsp ground kelp or tbsp of vegan Worcestershire sauce
Salt to taste
60g capers
50g toasted flaked almonds
2 tbsp yeast flakes
Nudge of miso or tsp salt

croutons

🥗Healthier: toasted whole grain bread

💰Cheaper: store-bought croutons

Whole grain bread is more nutritious.

Parmesan cheese

🥗Healthier: nutritional yeast

💰Cheaper: grated cheese blend

Nutritional yeast is lower in calories and adds flavor.

Caesar dressing

🥗Healthier: yogurt-based dressing

💰Cheaper: homemade dressing

Yogurt-based dressings are lighter and can be made at home.

1

In a large bowl, coat the capers with olive oil and spread them evenly over a parchment lined tray. Bake them in a preheated oven for about 8 to 10 minutes.

2

Rinse the lettuce in a bowl and set it aside in a colander with the chopped scallion whites.

3

Using either a stick blender or an inverted blender, make the dressing by pureeing the soy milk, balsamic vinegar, and Dijon mustard, then slowly adding the oil until a mayonnaise forms. Add the other ingredients and pulse until blended.

4

To make the cheese, grind the toasted flaked almonds, yeast flakes, and optional miso or salt together.

5

Combine a little less than half the dressing with the mixed leaves and divide them between three plates, scatter with croutons and almond parmesan.
