The salad's combination of crisp romaine lettuce, savory dressing, and crunchy croutons has made it a staple in many dining settings, from casual lunches to elegant dinners.

Start by making a basic mayonnaise with egg yolks, a spoon of Dijon mustard, and a splash of red wine vinegar.
Whisk the mixture until it thickens, then slowly drizzle in olive oil until it reaches a thick double cream texture.
Chop anchovies and garlic together to create a puree, then mix it into the mayonnaise along with grated Parmesan and lemon juice.
Add a splash of water to the dressing to lighten it up.
Dice crusty bread for croutons, season with salt and pepper, and add to a hot pan with olive oil.
Fry the croutons, tossing them until golden brown, then grate Parmesan cheese over them while cooking.
Assemble the salad starting with romaine lettuce, squeezing lemon juice over it.
Add half of the anchovy mayonnaise dressing and mix well.
Sprinkle half of the croutons over the salad and mix again, then add the remaining croutons and finish with a good grating of Parmesan cheese.
Preheat a griddle pan for the chicken breast.
Butterfly the chicken breast by slicing from the thin end towards the thick end, opening it up.
Season the chicken on both sides with salt and black pepper.
Lay the chicken breast on the grill and cook for 3-4 minutes on each side until grill marks appear.
Once cooked, spoon some of the remaining anchovy dressing over the chicken while it rests.
Slice the chicken into strips and serve warm in a separate bowl to prevent wilting the salad.
