Chop the onion finely. Cut the cabbage into small pieces, sprinkle with salt, massage it, let it sit for a while, then squeeze out the excess water.
In a bowl, combine minced pork, beaten egg, salt, pepper, onion, and cabbage, and mix well.
Spread bread crumbs on a tray, mist with water to moisten them like fresh bread crumbs.
Divide the mixture into 6 portions, shape them flat, place on the bread crumbs, and gently coat with crumbs.
Pour enough oil into a frying pan to submerge the mixture, heat over medium until bubbles form when chopsticks are placed in (about 170°C), then gently add the mixture to fry.
Do not touch for the first 2-3 minutes to allow the coating to crisp, then flip and fry for another 2-3 minutes.
Drain on kitchen paper, serve on a plate with shredded cabbage, drizzle with sauce, and top with tartar sauce.
