Add 2 tins of evaporated milk and 1 tin of condensed milk to a heated non-stick pot over medium heat.

Grate a piece of ginger and add it to the pot.

Crack 3 eggs into a bowl and whisk them before adding to the pot.

Stir the mixture continuously to prevent sticking at the bottom of the pot.

When the milk starts to boil, lower the heat to avoid splashing.

Continue stirring gently, scraping the sides of the pot.

Once it starts to curdle and make a frying sound, it's almost done.

Turn off the stove when it reaches the desired consistency, allowing it to dry out a bit.
