CAULIFLOWER GNOCCHI UNDER 400 CALORIES! (Trader Joe's Brand)

Cut the Italian sausage into little slices.

Heat a pan and sauté the sausage until sizzling.

Add 1 cup of sliced cremini mushrooms to the pan.

Add a handful of halved cherry tomatoes to the pan.

Add defrosted frozen artichokes to the pan.

Season with garlic powder and a little salt to taste.

Add 2 bunches of fresh spinach and chopped basil to the pan, cooking until the spinach is wilted.

In a separate bowl, combine 1/3 cup of chicken broth with 2 wedges of Laughing Cow cheese and whisk until heated through and thickened.

Add the cooked gnocchi to the sauce and cook for 2-3 minutes until softened.

Mix the gnocchi with the sautéed vegetables and sausage.

Plate the dish and add Parmesan cheese on top.
