Rinse and drain 1 can of black-eyed peas.
In a bowl, add the black-eyed peas and 1 can of drained corn.
Cut 3-4 roma tomatoes in half, remove the seeds, and dice the remaining tomato flesh.
Add the diced tomatoes to the bowl.
Chop 2 avocados and add them to the mixture.
Chop 1 bunch of fresh cilantro and add it to the bowl.
Use a garlic press to add 2 cloves of garlic to the mixture.
Add 3/4 teaspoon of sea salt and 1/8 teaspoon of black pepper to the bowl.
Add 1 teaspoon of ground cumin to the mixture.
Stir all the ingredients together until well combined.
Pour in 1/4 cup of extra virgin olive oil and 1/4 cup of red wine vinegar.
Stir again to combine everything.
Let the mixture sit for at least 30 minutes to marinate, either on the counter or in the refrigerator.
