Drain the black-eyed peas, black beans, and Mexican style street corn, rinsing them well to remove excess syrup.
Chop 2 small limes in half for juice.
Slice and dice 2 Roma tomatoes, removing the seeds.
Chop 1 red bell pepper into small pieces.
Dice 1/4 cup of red onion.
Remove seeds and membranes from jalapeño, then chop it.
Cut 1 avocado in half, remove the pit, and scoop out the flesh.
Rinse cilantro thoroughly to remove sand and dirt, then chop it finely.
Combine all chopped vegetables in a large serving bowl.
Give the drained beans, peas, and corn a final shake to remove excess water, then add them to the vegetable mixture and toss well.
In a separate bowl, squeeze the juice from the limes, then add 2 tablespoons of red wine vinegar, 1 tablespoon of olive oil, 2 teaspoons of granulated sugar, 1 teaspoon of ground cumin, and salt and pepper to taste.
Stir the dressing ingredients together until well combined.
Pour the dressing over the bean and vegetable mixture and toss to coat evenly.
Cover the bowl with plastic wrap and refrigerate for about 30 minutes to let the flavors meld.
