In a separate bowl, mix together 1/2 cup olive oil, 2 tablespoons red wine vinegar, 1 1/2 teaspoons cumin, and 2 tablespoons lime juice.
Whisk the dressing together and set aside.
Get a large mixing bowl and add the drained and rinsed black-eyed peas, black beans, and corn.
Rinse the beans and corn in a strainer to remove excess liquid and starchiness before adding them to the bowl.
Add 1/2 of a red onion, chopped, to the bowl.
Use a veggie chopper to chop the red onion into small pieces.
Chop 1/2 of a red bell pepper and 1/2 of a green bell pepper, removing the seeds and membranes, and add to the bowl.
Chop 1 jalapeño, removing the seeds and membranes, and add to the bowl.
Season the mixture with salt and pepper to taste.
Pour the dressing over the vegetable and bean mixture and mix well until fully combined.
