Remove silver skin from flank steak.
Butterfly the flank steak by cutting it in half while keeping the spine intact.
Add olive oil to the flank steak.
Chop fresh basil and rosemary, then add to the olive oil.
Add minced garlic to the mixture.
Combine olive oil, basil, rosemary, and garlic in a bowl for marinade.
Marinate the flank steak for about 5 hours.
Start an oak fire in the fire pit.
Pour the remaining olive oil over the marinated flank steak before cooking.
Place the flank steak on the fire, adjusting the heat to medium-low (275-300 degrees).
Stoke the fire to increase heat as needed.
Cook the flank steak for about 5 minutes, then give it a quarter turn.
After another 5 minutes, check for doneness and prepare to flip.
Add more olive oil to the fire if needed to stoke it further.
Cook until the steak is rare to medium-rare, flipping if desired for more doneness.
Remove the steak from the fire and let it rest for about 5 minutes.
Slice the steak against the grain diagonally for serving.
