Alcohol is essential for flambéing.

1

Unwrap the Kesari cheese and slice it into pieces between a quarter and a half inch thick.

2

Brush each side of the cheese lightly with water or wet it under the faucet.

3

Dredge both sides of the cheese in flour, ensuring it is completely covered, and brush off the excess flour.

4

Heat a well-seasoned cast-iron skillet on medium-high heat until it starts to smoke.

5

Pour about 1 tablespoon of olive oil into the hot skillet.

6

Carefully place the floured cheese into the skillet using tongs.

7

Cook the first side for about 2 minutes until it forms a golden-brown crust and the cheese begins to ooze out.

8

Quickly flip the cheese over without hesitation and cook the second side for about 30 seconds, until a quarter to a third of the cheese is melted.

9

Remove the skillet from heat and pour over the brandy.

10

Ignite the brandy with a long lighter and yell 'OPA' as it bursts into flames.

11

Extinguish the flames with a squeeze of fresh lemon juice and garnish with freshly chopped parsley or oregano.

12

Serve immediately with toasted bread.
