Welcome to the kitchen and introduce the recipe for boiled oxtail.
Show 3 pounds of oxtail and explain how it was cut at the meat market into chunky pieces.
Wash the oxtail under cold water to clean it.
Add salt and vinegar to the oxtail, then cut a large lemon in half to clean the meat with lemon juice.
Clean the oxtail thoroughly with lemon juice, ensuring to get into all the crevices.
Repeat the cleaning process with the other half of the lemon and apple cider vinegar, letting it sit for 30 minutes.
After 30 minutes, rinse the oxtail well to remove any remaining salt and vinegar.
Prepare a pot with 5 cups of boiling water and add seasonings: 1/2 teaspoon black pepper, 1 tablespoon onion powder, 1 tablespoon garlic powder, 1 tablespoon all-purpose seasoning, 1 tablespoon paprika, 1 tablespoon salt, and 12 allspice seeds.
Add the oxtail to the boiling water and let it cook for about 2 hours, stirring occasionally.
After 1 hour, check the oxtail; remove some of the fat that floats on top but leave some for flavor.
Add 2-3 cups of hot boiling water if necessary to keep the oxtail submerged.
After 45 minutes, check the tenderness of the oxtail; it should be soft but not falling apart.
Remove the thyme from the pot after the cooking time is up.
Add coconut cream to the oxtail and let it simmer for 15 minutes.
Prepare additional seasonings: onion, scallion, thyme, pepper, tomatoes, and garlic, and add them to the pot.
Decide to add potatoes to thicken the gravy naturally without using thickeners.
Add 1 tablespoon of browning sauce (Ostara brand) to the pot.
