Sicilian Cannoli

1/2 cup of Marsala sweet wine
1 full egg
1 egg yolk
45g of butter cold cut in cubes
1-2 heaping tablespoons of granulated sugar
1/2 teaspoon of cocoa powder (optional)
frying oil for frying up to 2” depth (5cm)
3 cups of ricotta cheese
1 teaspoon of cinnamon
1 teaspoon of vanilla
2-3 tablespoons of orange and lemon peel candied
1/2 cup of powdered (icing) sugar
1 lemon zest
chopped pistachios and/or grated chocolate

Place flour on a clean surface area and add 45g of butter working into the flour. Create a well and add all dough ingredients and mix until dough forms. Once dough is ready, put in plastic wrap and let it rest in the fridge for 2 hours.

Take dough out of fridge and roll out very thin. Cut the dough into 4” diameter circles using a glass or coffee cup. Wrap cut out circle doughs around a cannoli tube or mold and ensure that there is a slight overlap.

Use egg white on the tips of the circles to seal it.

Prepare a deep pan and pour frying oil to approx. 2” deep and heat on medium. Once the pan heated, carefully place the cannoli tubes in the oil and flip using metal tongs or a fork until crispy golden brown. Once fried, remove and place on a plate with paper towels to soak any excess oil.

Hold the tubes using a towel and gently twist to slide them out. Continue with all remaining cut out circles and set aside to cool.

To fill the cannoli with your ricotta mixture, use a piping bag, spoon or a pastry dispenser such as a cookie press to fill your cannoli. Fill the shells with your mixture on both sides and dip the ends in crushed pistachio or chocolate for added enjoyment. Sprinkle powdered (icing) sugar on top, serve and enjoy!
