Heat a pan over medium heat and add olive oil.
Chop half a brown onion and add it to the pan; sweat the onions.
Add 1 whole head of minced garlic to the pan and mix.
Add 2.5 pounds of 80/20 ground beef to the pan; cover and let it cook down, checking occasionally and breaking up the meat.
Add 2 tablespoons of salt, 2 big pinches of black pepper, 1 teaspoon of basil, 1 teaspoon of oregano, 1 teaspoon of paprika, and 1 teaspoon of garlic to the meat mixture; mix well and cover.
Add 2 tablespoons of seven spice to the meat mixture; let it cook down for a few more minutes.
Stir in 2 tablespoons of tomato paste and 1/4 stick of butter; optionally add mushrooms and mix.
Add 28 ounces of crushed tomato and a little water to the mixture; stir well and let it simmer.
Boil water for the lasagna noodles; add a few basil leaves to the meat sauce while it simmers.
Add the lasagna noodles to the boiling water without oil; cook for 12-13 minutes until done.
Drain the noodles and let them sit for a few minutes.
Spread some meat sauce on the bottom of a baking dish for moisture.
Layer the noodles over the sauce, followed by ground beef, and then a generous amount of the cheese mixture.
Repeat the layering process until all ingredients are used, finishing with cheese on top.
Cover the dish with foil, puncturing holes in it to prevent overflow, and bake in a preheated oven at 400°F for about 30 minutes.
Remove the foil and bake for an additional time to allow the cheese to brown.
