Remove the stem from the breadfruit and make an even slit around it for roasting.
Roast the whole breadfruit on the stovetop, rotating until fully cooked, about 30-35 minutes.
Wash the caloo leaves with salt to remove any insects, strip them down, and cut them up.
Steam the caloo in a pot without adding water, allowing it to create its own liquid, for about 7-8 minutes.
Add coconut oil to the pot, then sauté onion, garlic, tomato, bell pepper, thyme, and Scotch bonnet pepper for 1-2 minutes.
Add the minced salted fish to the sautéed mixture and cook for another minute.
Combine the steamed caloo with the sautéed mixture, adding salt and black pepper to taste.
Cut the roasted breadfruit in half to create two bowls, remove the stem, and add melted butter to the flesh.
Fill the breadfruit bowls with the caloo and salted fish mixture.
