Preheat the oven to 350°F (175°C).
Grease a 9x5 inch loaf pan with Crisco.
In a large bowl, combine 3 cups of all-purpose flour, 2/3 cup of sugar, 1 teaspoon of baking soda, and 1 teaspoon of cinnamon.
In another bowl, mix 8 ounces of applesauce, 1/3 cup of vegetable oil, and 1 tablespoon of lemon juice.
Lightly fold the wet ingredients into the dry ingredients until just blended, being careful not to overmix.
Add in 1/2 cup of chopped pecans and fold them in gently.
Stir in the 15-ounce can of drained fruit cocktail, mixing lightly.
Pour the batter into the prepared loaf pan.
Bake in the preheated oven for 60 to 70 minutes or until a toothpick inserted into the center comes out clean.
Let the bread cool in the pan for a few minutes before transferring it to a wire rack to cool completely.
