Tomato Sandwich

2 large ripe tomatoes
1/2 cup onions, diced
1/4 cup Duke's mayonnaise
1 tablespoon mustard
4 slices Wonder White bread
to taste salt
to taste pepper
as needed paper towels

Slice the big, ripe tomatoes into medium-sized slices.

Slice the onions into medium-sized pieces.

In a square Rubbermaid container, place a layer of paper towels at the bottom.

Add a layer of sliced tomatoes on top of the paper towels.

Spread some sliced onions over the tomatoes.

Add another layer of paper towels on top of the onions.

Repeat the layering process with more tomatoes and onions until all are used, finishing with a layer of onions on top.

Seal the container with a lid and refrigerate overnight.

The next day, check the tomatoes; they should have absorbed some onion flavor.

In a bowl, combine about half a cup of Duke's mayonnaise with a tiny bit of mustard and mix well.

Prepare the sandwich by spreading mayonnaise on both sides of the Wonder White bread.

Add a generous amount of sliced tomatoes to one side of the bread.

Season with salt and pepper to taste.
