Mix 7 grams of dry active yeast and 1 teaspoon of caster sugar in 225 milliliters of warm water until dissolved.

Add 200 grams of strong white flour to the yeast mixture and mix well.

Cover with cling film and place in the fridge overnight to prove.

Remove the sponge from the fridge and add 100 grams of flour and 8 grams of fine sea salt.

Knead the dough on a surface until it doesn't stick to your fingers.

Cut the dough into 8 pieces and roll each into a ball.

Place the balls in a warm oven to proof until doubled in size.

Prepare the garlic sauce by crushing 20 grams of dry garlic and mixing it with a pinch of sea salt and 2 tablespoons of sunflower oil.

Chop parsley and add it to the garlic mixture.

Brush the risen dough balls with a beaten duck egg.

Bake in the oven at 220 degrees Celsius for 20-25 minutes.
