Combine 200 gm strong flour, 7 gm caster sugar, 7 gm dried yeast, and 225 ml tepid water in a bowl; mix until smooth and cover to let it prove overnight in the fridge.

The next day, add another 200 gm strong flour and 8 gm sea salt to the sponge mixture; mix until not sticky and knead until smooth and elastic.

Divide the dough into 8 even pieces and shape each into a ball.

Place the balls in a greased dish, cover with a wet cloth, and let them prove until doubled in size, about 1 hour.

Preheat the oven to 225°C (425°F).
