Heat vegetable oil in a large skillet over medium heat and brown the turkey wings, not cooking them all the way through.
Transfer browned turkey wings to a 6-quart slow cooker.
In the same skillet, add diced onion and mushrooms, cooking until translucent over medium heat.
Add more vegetable oil to the skillet and sprinkle in the reserved flour, cooking until it turns a peanut butter color.
Slowly whisk in chicken broth until smooth, ensuring no lumps remain.
Add fresh sage, and adjust salt and pepper to taste.
Pour the gravy over the turkey wings, onions, and mushrooms in the slow cooker.
Cover and cook on low for 6 hours until the turkey wings are tender and falling off the bone.
