Preheat the oven to 350°F (175°C).

Grab a jumbo muffin tin and place corn tortillas in it.

Scoop a hearty amount of cooked ground beef into each tortilla using an ice cream scooper.

Season the ground beef with taco seasoning to taste.

Add diced green chilies on top of the ground beef in each tortilla.

Drizzle red enchilada sauce over each tortilla until soaked.

Top each tortilla with a generous amount of Mexican cheese (cheddar jack).

Place the muffin tin in the oven and bake for 25 minutes.

Serve with a dollop of sour cream on top.
