Preheat the oven to 350°F (175°C).
Grease a 9 x 13 baking slab with cooking spray or butter.
Mix Biscoff cookie crumbs and melted butter in a bowl until combined.
Press the crumb mixture into the bottom of the prepared baking slab.
In a separate bowl, whisk the egg white until frothy and set aside.
Spread fresh cranberries evenly over the crust.
Sprinkle chopped walnuts and crystallized ginger over the cranberries.
Add rolled oats on top of the layers.
Pour sweetened condensed milk evenly over the layers.
Drizzle the whisked egg white over the top.
Sprinkle vanilla extract, ground cinnamon, and coconut over everything.
Bake in the preheated oven until golden, about 25-30 minutes.
Remove from oven and let cool completely in the pan before cutting into bars.
