Coconut Breakfast Porridge

¾ cup Water
⅛ tsp Kosher Salt
1 large Egg
2 tsp Butter
1 tbsp Coconut Milk
2 tbsp Flax Seeds
1/8 cup Blueberries
2 tbsp Coconut Flour

Place ground flax seeds, coconut flour, water and salt in a small saucepan. Heat mixture on medium-high heat until slightly thickened.

Beat an egg. Take mixture off the heat, add half of the egg, whisk. Then add the rest of the egg. Whisk mixture until thickened and egg is cooked through.

Remove from the heat, stir in butter. Top porridge with coconut milk and blueberries, if desired.
