In a bowl, combine the flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt.

Gradually add the dry ingredients to the wet ingredients and mix until just combined.
Fold in the grated carrots.
Pour the carrot cake batter into a prepared cake pan and bake for about 25-30 minutes, or until a toothpick comes out clean.
In a separate bowl, beat the cream cheese until smooth, then add the sour cream, granulated sugar, vanilla extract, and eggs, mixing until well combined.
Pour the cheesecake batter over the cooled carrot cake layer.
Bake the cheesecake layer for an additional 50-60 minutes, or until set.
Allow the cake to cool before serving.
