Start by gathering 3 ripe bananas, preferably brown and spotty for extra sweetness.
Add the bananas to the blender along with a generous amount of vanilla extract and 3 tablespoons of maple syrup.
Crack in 3 eggs for added protein.
Blend the wet ingredients for about 30 seconds until well mixed.
Add 1 cup of almond flour, 1/2 cup of cacao powder, a pinch of kosher salt, and 1/2 teaspoon of baking soda to the blender.
Include 1/2 cup of oats and 3 tablespoons of hemp hearts for nutrition.
Blend the mixture, pushing ingredients down as needed to ensure everything is well combined. If the batter is too thick, add 1-2 tablespoons of milk to help it blend.
Once blended, stir in 1/2 cup of chocolate chips by hand, ensuring they are evenly distributed without blending them into the batter.
Coat the inside of muffin liners with non-stick cooking spray to prevent sticking.
Using a large cookie scoop, fill the muffin liners all the way to the top with batter, as they won't rise much during baking.
Sprinkle a few extra chocolate chips on top of each muffin for decoration.
Bake in the oven at 350°F for 20 to 30 minutes, or until a tester comes out clean.
Once baked, sprinkle the muffins with a little sea salt for added flavor.
Allow the muffins to cool slightly before serving.
