Preheat the oven to 375°F (190°C).
Sauté chopped onions in olive oil until translucent, about 5 minutes.
Add spinach to the onions and cook until wilted, about 3-4 minutes.
Remove from heat and let cool slightly.
In a bowl, mix feta cheese, eggs, black pepper, and chopped parsley.
Layer phyllo dough in a greased baking dish, brushing each layer with olive oil.
Spread half of the spinach mixture over the phyllo.
Add half of the cheese mixture on top of the spinach.
Layer more phyllo dough over the filling, brushing with olive oil again.
Repeat with remaining spinach and cheese mixtures, finishing with phyllo layers.
Brush the top layer with olive oil and score into squares with a knife.
Bake in the preheated oven for 30-40 minutes until golden brown.
Let cool for a few minutes before serving.
