Heat an oven-safe skillet on the stove and add butter until melted.
Add leeks and cook until they become a little brighter green and shrink down.
Add garlic and quinoa, stirring constantly for about a minute until fragrant.
Pour in chicken broth and season with fresh thyme, dried oregano, salt, and pepper. Bring to a boil, then reduce heat to medium-low, cover, and simmer for 15-20 minutes until liquid is absorbed and quinoa is softened.
Add chopped asparagus, shredded cooked chicken, and ricotta cheese. Stir to combine.
Add zest and juice of one lemon, and a handful of parsley. Mix well.
Top with freshly grated Parmesan and nestle in a few lemon slices. Bake in a preheated oven at 375°F for 15 minutes or until Parmesan is melted.
Garnish with freshly chopped parsley before serving.
Heat olive oil in a skillet and add ground turkey, seasoning with salt and pepper. Break it into bits while cooking.
Add diced onion, diced red bell pepper, and corn, stirring until fragrant.
Add minced garlic and jalapeno, cooking until aromatic.
Stir in chili powder and ground cumin, cooking until fragrant.
Add rinsed black beans, quinoa, diced tomatoes, and chicken broth. Bring to a boil, then reduce heat to medium-low, cover, and simmer for 15-20 minutes until quinoa is cooked through.
Sprinkle shredded cheddar cheese on top, cover, and let melt.
Finish with freshly chopped cilantro before serving.
Heat a cast iron skillet and add butter until melted.
Add finely diced onion and sauté for 3-4 minutes until translucent.
Add minced garlic and red chilies, cooking briefly.
Stir in smoked paprika, then add quinoa and mix well.
Season with salt and pepper, bring to a boil, then reduce heat to medium-low, cover, and simmer for about 15 minutes.
Ensure there's still some liquid left, then add chopped broccoli and shrimp. Cover and cook for an additional 5 minutes until shrimp is pink and broccoli is bright green.
Finish with a squeeze of lemon juice and garnish with finely chopped green onion.
