Traditional Algerian Pizza

Originating from the Maghreb region, Mhadjeb is a beloved street food in Algeria, traditionally enjoyed by families and shared during gatherings. This dish showcases the rich flavors of local vegetables and spices, wrapped in a simple yet satisfying dough. Today, Mhadjeb is not only popular in Algeria but has also found its way into the hearts of food lovers around the world, often adapted with various fillings.

Add flour and fine semolina into a large mixing bowl.
Add olive oil and egg to the bowl.
Make a well in the middle of the bowl and add yeast and sugar.
Gradually add milk until a soft dough forms.
Add salt and knead the dough until well incorporated.
Cover the dough with a kitchen towel and let it rest.
Grate four large ripe tomatoes and set aside.
Sauté onions in olive oil until translucent, then add grated tomatoes and garlic.
Add salt and sugar to balance acidity, then add fresh thyme and bay leaf.
Stir in tomato paste and cook sauce on low heat for 10-15 minutes until thick.
After resting, form the dough into a ball and cut in half for two trays of pizza.
Roll out one ball of dough to fit the baking tray.
Brush the tray with olive oil and sprinkle with cornmeal or coarse semolina.
Place the rolled dough into the tray and form a crust on the sides.
Spread the tomato sauce generously over the dough, removing bay leaf and thyme.
Top with fresh thyme and sliced green olives.
Preheat oven to 200 degrees Celsius and bake pizza for 15-20 minutes.
