Use a blender or food processor to crush 2 cups of leftover Christmas cookies into crumbs.
In a mixing bowl, combine cookie crumbs, 2 tablespoons of sugar, 2 tablespoons of water, and the zest of 1 orange.
Mix the ingredients until they bind together to form a crust.
Prepare a 10-inch springform pan by drizzling melted butter and smoothing it with plastic wrap.
Press the cookie mixture into the bottom and up the sides of the springform pan.
In a mixer, add 2.5 pounds of cream cheese and mix until smooth.
Gradually add 16 ounces of sugar while mixing until dissolved.
Add 2 tablespoons of Madagascar vanilla extract and mix.
Add 3 large eggs one at a time, mixing gently to avoid incorporating too much air.
Pour the cream cheese mixture into the prepared crust.
Bake at 325°F for 1 hour until the cheesecake is firm and slightly brown around the edges.
Let the cheesecake cool for about an hour on a wire rack before refrigerating.
