Whole wheat flour adds fiber.
Preheat oven to 350°F (175°C).
In a mixing bowl, cream together 2 sticks of butter and 2 cups of white sugar for about 3-4 minutes.
Add 1 tablespoon of vinegar and mix.
Add 3 large eggs one at a time, mixing well after each addition.
In a separate bowl, whisk together 4.5 cups of sifted all-purpose flour, 2 teaspoons of baking soda, and 2 teaspoons of baking powder.
Gradually add the dry mixture to the wet mixture.
In another bowl, combine 1 cup of whole milk with 1 tablespoon of vanilla extract and 1 tablespoon of coconut flavoring, then slowly add to the batter.
Once combined, place the batter in the freezer for 24 hours (or up to 2 weeks).
After freezing, use an ice cream scoop to scoop out the frozen batter onto a parchment-lined baking sheet.
Bake in the preheated oven for 13 minutes.
Remove cookies from the oven and let cool on the baking sheet for a couple of minutes before transferring to a wire rack to cool completely.
For the frosting, cream together 1 stick of softened butter and 1/2 cup of butter flavored shortening.
Gradually beat in 4 cups of powdered sugar, adding 4 tablespoons of milk as needed to achieve desired consistency.
Add 1 teaspoon of coconut extract and 1 teaspoon of vanilla extract to the frosting and mix well.
Frost the cooled cookies and add colored sugars or sprinkles immediately before the frosting sets.
