Preheat the oven to 350°F.
Prepare the shortbread crust by mixing 1 1/4 cups of all-purpose flour, 1/4 cup of cornstarch, and 1/4 cup of confectioner sugar in a bowl.
Add 1 cup of chopped pecans and mix until crumbly.
Press the mixture into a pie plate to form the crust.
Bake the crust for 15 to 20 minutes until golden brown.
In a heavy bottom saucepan, combine 1 box (5 oz) of chocolate cook and serve pudding mix, 1 3/4 cups of milk, and 1 cup of heavy cream.
Add 1 oz of chopped unsweetened baker's chocolate and 1/2 cup of granulated sugar to the saucepan.
Stir the mixture over medium-high heat for about 5 minutes until thickened.
Remove from heat and let cool slightly before adding 1 teaspoon of vanilla extract.
Pour the chocolate filling into the cooled pie crust and let it cool to room temperature.
Cover with cling wrap to prevent a film from forming and refrigerate until set, preferably overnight.
Top with Cool Whip and sprinkle with additional chopped pecans and chocolate curls before serving.
