Carnitas Tacos with Pico de Gallo

Cultural Context

Carnitas, meaning 'little meats' in Spanish, originated in the state of Michoacán, Mexico. Traditionally made for special occasions, this dish highlights the slow-cooked, tender pork that is often served in tacos. The vibrant pico de gallo adds freshness and crunch, making it a beloved street food across Mexico and beyond. Today, carnitas tacos are enjoyed worldwide, with various adaptations reflecting local tastes and ingredients.

1

Prepare the carnitas by seasoning the pork shoulder with salt, pepper, and crushed garlic.

Sear the pork in a hot skillet until browned on all sides, about 5-7 minutes.

3

Add orange zest, juice, sliced onions, bay leaves, and water to the skillet, then cover and reduce heat to low.

Braised the pork for 2-3 hours until tender, shredding it with forks afterward.

7

Warm the corn tortillas on a grill or skillet until pliable, about 1-2 minutes per side.

Assemble the tacos by placing shredded carnitas onto warm tortillas.
