The term 'carnitas' translates to 'little meats,' referring to the slow-cooked pork that is tender and flavorful. Traditionally served in tacos, they are often accompanied by fresh toppings like cilantro and onions, making them a popular choice for both casual meals and festive occasions. Their versatility allows them to be enjoyed at any time of day, whether for lunch, dinner, or a late-night snack.

Pork tenderloin is leaner, while pork butt is often less expensive.

Make the cilantro lime sauce by adding cilantro, jalapeno, garlic powder, onion powder, cumin, lime juice, Crema Mexicana, and mayonnaise to a food processor.
Process until smooth, then season with salt and process again to blend.
Store the sauce in the fridge.
Trim off the fat from the pork shoulder roast and remove the skin, saving any meat for other recipes.
Cut the pork shoulder in half and remove the bone, saving some meat on the bone for other recipes.
Season the pork with salt and place it in a roasting pan or baking dish with a little bit of water.
Bake the pork at 375°F for about 1 hour.
After 1 hour, turn the pork over and bake at 450°F for about 30 minutes, turning every 5 to 8 minutes until golden brown.
Remove the pork from the oven and shred it with forks or hands, being careful as it will be hot.
Warm the corn tortillas on a hot pan for about 10 seconds per side, optionally frying them in oil.
Assemble the tacos by placing shredded carnitas on a corn tortilla, adding cilantro, white onion (optional), cilantro lime sauce, hot sauce, avocado, and lime wedges.
