Mix in the cooled spinach and onion mixture until well combined.
Lay one sheet of phyllo dough in a greased baking dish, brushing with melted butter.
Layer additional sheets of phyllo, brushing each with butter, until you have 4 layers.
Spread the spinach mixture evenly over the phyllo layers.
Top with more phyllo sheets, brushing each with butter, until you have 4 more layers.
Sprinkle sesame seeds on top for garnish.
Bake in the preheated oven for 30-35 minutes, until golden brown.
Remove from oven and let cool for 10 minutes before slicing.
Serve warm or at room temperature.
