Start by sautéing 1/2 small onion in 1 1/2 tbsp cooking oil until fragrant.
Add 1 lb lean ground beef to the pan and break it up while cooking.
Stir in 2 1/2 tbsp chili powder, 1 1/2 tsp smoked paprika, 1 1/2 tsp beef bouillon powder, onion garlic powders, cracked black pepper, and salt.
Add 1/2 cup beans and 1/4 cup bean liquid from Ranch style beans to the mixture.
Mix in 1 1/2 tbsp ketchup and combine everything well.
Add 1 tsp Maggi seasoning sauce and 3/4 cup water, then mix.
Cover the pan with a lid and let it simmer gently for 15 minutes, stirring occasionally.
After 15 minutes, stir again and taste for seasoning, adjusting as necessary.
Add a cornstarch slurry to thicken the chili and let it simmer for another 3 to 5 minutes until done.
Prepare 8 white soft hot dog buns by cutting a hole in parchment paper for steaming.
Steam the buns in a steamer pot for 5 to 7 minutes on low heat.
Boil the hot dogs in a shallow pan of water for 5 to 10 minutes until heated through.
In a small pot, combine 8 oz Velveeta cheese and 1/2 cup whole milk, simmering until melted and combined to make cheese sauce.
Finely mince additional white onion for topping, if desired.
Assemble the hot dogs by placing the boiled hot dogs in the steamed buns.
Top the hot dogs with homemade chili, yellow mustard, and minced onion.
